Wilton Course 3 Final Cake

I am now finished the third Wilton course!  I was so excited to finally make a tiered cake.  I have really enjoyed course 3 and I love working with fondant.  It’s amazing what beautiful creations you can make with it!  For the final class, we had to bring in our cake layers covered with fondant.  When I made the package cake, I used store-bought Wilton fondant so I could get a feel for what fondant is supposed to be like, but this time, I wanted to make my own.  I used these instructions from Confections of a Foodie Bride and it came out perfectly.  I thought it might be tricky to work with, but it was incredibly easy.  The marshmallow fondant isn’t exactly a snack you’d have on your own, but it does taste much better than store-bought fondant.

Most of the final cakes for course 3 involve lots of flowers, but I wanted to make something different and use some fun, colorful designs.  I knew I wanted to stack the layers, because I like the look of a stacked cake over a tiered one.  The bottom layer is an 8-inch cake and the top is a 6-inch cake.   I was looking through a magazine on decorating with fondant, and I saw the two-toned bow and I knew it was something I wanted to try.  I decided to use Clemson colors (go Tigers!).  This cake was so much fun because I got to incorporate so many different decorations- the bow, fondant balls, string work, and the dots.  This would have been a great graduation cake- I’ll have to do something like this next time there’s a Clemson graduate around!  I guess I’ll just have to think of it as a way to get excited about football season 🙂  I will be making my Course 2 final cake next week, but I think I’m going to hold off a bit on taking Course 4, since August gets so busy for me with school starting and a vacation planned.  I’m happy with what I’ve done so far, and I can’t wait to decorate some more cakes with fondant.  I got a fondant magazine and there are so many possibilities that I want to try!

And in case you were wondering- the top tier is chocolate and the bottom is red velvet 🙂

  5. Looks amazing! You’re lucky that you could do whatever you wanted – my instructor insisted that we had to have fondant roses and the columns.
